- 2 medium zucchini, grated
- 1 teaspoon salt
- 1/2 cup all-purpose flour
- 1/4 cup grated Parmesan cheese
- 1/4 cup chopped green onions
- 1 large egg, beaten
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/4 teaspoon black pepper
- Cooking spray
Instructions
- Grate the zucchini and place it in a clean kitchen towel. Squeeze out as much excess moisture as possible.
- In a large bowl, combine the grated zucchini, salt, flour, Parmesan cheese, green onions, beaten egg, garlic powder, onion powder, and black pepper. Mix until well combined.
- Preheat the air fryer to 375°F (190°C).
- Form the zucchini mixture into small patties, about 2-3 inches in diameter.
- Spray the air fryer basket with cooking spray. Place the zucchini fritters in a single layer in the basket, making sure not to overcrowd.
- Cook in the air fryer for 10-12 minutes, flipping halfway through, until golden brown and crispy.
- Remove the fritters from the air fryer and let them cool slightly before serving.
Notes
- For extra flavor, add herbs like dill or parsley to the mixture.
- Make sure to squeeze out as much moisture from the zucchini as possible for crispier fritters.
- Serve with your favorite dipping sauce, such as tzatziki or marinara.
