Ingredients

  • 1 medium watermelon, halved and scooped
  • 2 cups coconut water
  • 1 cup lime juice
  • 1/2 cup simple syrup (adjust to taste)
  • 1 cup club soda or sparkling water
  • Fresh mint leaves for garnish
  • Lime slices for garnish

Instructions

  1. In a large pitcher, combine the coconut water, lime juice, and simple syrup. Stir until well mixed.
  2. Add the watermelon flesh to the pitcher and mash slightly to release the watermelon juices.
  3. Chill the mixture in the refrigerator for about 30 minutes.
  4. Just before serving, add the club soda or sparkling water for fizz.
  5. Serve the punch in glasses filled with ice, garnished with mint leaves and lime slices.

Notes

  • You can adjust the sweetness by adding more or less simple syrup.
