Ingredients

  • 1 can (15 oz) black beans, rinsed and drained
  • 1/2 cup breadcrumbs
  • 1/2 cup corn, canned or frozen
  • 1/2 cup bell pepper, diced
  • 1/4 cup onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • 1 egg, beaten (or flax egg for vegan option)
  • 4 hamburger buns
  • Lettuce, tomato, and other toppings as desired

Instructions

  1. In a large bowl, mash the black beans with a fork until mostly smooth.
  2. Add breadcrumbs, corn, bell pepper, onion, garlic, cumin, chili powder, salt, pepper, and the beaten egg. Mix until combined.
  3. Form the mixture into 4 patties.
  4. Heat a skillet over medium heat with a little oil. Cook the patties for 5-7 minutes on each side until golden brown.
  5. Toast the hamburger buns if desired.
  6. Assemble the burgers by placing a patty on each bun and adding your favorite toppings.

Notes
