A refreshing and creamy vegetable salad mixed with mayonnaise, perfect as a side dish or light meal.

- 2 cups chopped assorted vegetables (carrots, bell peppers, cucumbers, and peas)
- 1 cup mayonnaise
- 1 tablespoon lemon juice
- Salt and pepper to taste
- 1 teaspoon dried herbs (oregano or parsley)
- 1/4 cup chopped onions (optional)
Instructions
- In a large mixing bowl, combine the chopped vegetables.
- In a separate bowl, mix the mayonnaise, lemon juice, salt, pepper, and dried herbs until smooth.
- Pour the mayonnaise mixture over the vegetables and toss gently to coat all the vegetables evenly.
- Add chopped onions if using, and mix again.
- Chill the salad in the refrigerator for at least 30 minutes before serving for the best flavor.
- Serve cold as a side dish or light meal.
