- 2 cups vegetable broth or water

- 1 teaspoon turmeric powder
- 1 onion, finely chopped
- 2 cloves garlic, minced

- Salt and pepper to taste
- Fresh cilantro for garnish (optional)
Instructions
- Rinse the basmati rice under cold water until the water runs clear. This removes excess starch and helps achieve fluffy rice.
- In a medium saucepan, heat the olive oil over medium heat. Add the chopped onion and garlic, sautéing until they are translucent.
- Stir in the turmeric powder, mixing well to coat the onions and garlic.
- Add the mixed vegetables and sauté for an additional 2-3 minutes until they are slightly tender.
- Add the rinsed basmati rice to the pot and stir to combine with the vegetables.
- Pour in the vegetable broth or water, and season with salt and pepper to taste.
- Bring the mixture to a boil, then reduce the heat to low and cover. Allow it to simmer for about 15-20 minutes, or until the rice is cooked and the liquid is absorbed.
- Remove from heat and let it sit, covered, for an additional 5 minutes.
- Fluff the rice with a fork, garnish with fresh cilantro if desired, and serve warm.
