Instructions

  1. Rinse the basmati rice under cold water until the water runs clear. This removes excess starch and helps achieve fluffy rice.
  2. In a medium saucepan, heat the olive oil over medium heat. Add the chopped onion and garlic, sautéing until they are translucent.
  3. Stir in the turmeric powder, mixing well to coat the onions and garlic.
  4. Add the mixed vegetables and sauté for an additional 2-3 minutes until they are slightly tender.
  5. Add the rinsed basmati rice to the pot and stir to combine with the vegetables.
  6. Pour in the vegetable broth or water, and season with salt and pepper to taste.
  7. Bring the mixture to a boil, then reduce the heat to low and cover. Allow it to simmer for about 15-20 minutes, or until the rice is cooked and the liquid is absorbed.
  8. Remove from heat and let it sit, covered, for an additional 5 minutes.
