- 2 tablespoons olive oil
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 can (28 ounces) crushed tomatoes
- 4 cups vegetable broth
- 1 cup uncooked rice (white or brown)
- 1 teaspoon dried basil
- 1 teaspoon dried oregano
- Salt and pepper to taste
- Fresh basil for garnish (optional)
Instructions
- In a large pot, heat olive oil over medium heat. Add diced onion and sauté until translucent, about 5 minutes.
- Stir in minced garlic and cook for an additional minute until fragrant.
- Add the crushed tomatoes, vegetable broth, dried basil, and dried oregano. Bring the mixture to a boil.
- Once boiling, stir in the uncooked rice. Reduce heat to low and cover the pot.
- Simmer for 20-25 minutes (white rice) or 40-45 minutes (brown rice) until the rice is cooked through.
- Season with salt and pepper to taste. Serve hot, garnished with fresh basil if desired.
