Ingredients

  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 can (28 ounces) crushed tomatoes
  • 4 cups vegetable broth
  • 1 cup uncooked rice (white or brown)
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • Fresh basil for garnish (optional)

Instructions

  1. In a large pot, heat olive oil over medium heat. Add diced onion and sauté until translucent, about 5 minutes.
  2. Stir in minced garlic and cook for an additional minute until fragrant.
  3. Add the crushed tomatoes, vegetable broth, dried basil, and dried oregano. Bring the mixture to a boil.
  4. Once boiling, stir in the uncooked rice. Reduce heat to low and cover the pot.
  5. Simmer for 20-25 minutes (white rice) or 40-45 minutes (brown rice) until the rice is cooked through.
  6. Season with salt and pepper to taste. Serve hot, garnished with fresh basil if desired.
