Ingredients

  • 2 large chicken breasts, boneless and skinless
  • 1 cup chicken broth
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 2 pounds potatoes, peeled and cubed
  • 1/2 cup milk
  • 4 tablespoons unsalted butter
  • 1/4 cup sour cream (optional)
  • Fresh parsley for garnish (optional)

Instructions

  1. Place the chicken breasts in the pressure cooker and season with garlic powder, onion powder, salt, and pepper. Pour in the chicken broth.
  2. Seal the pressure cooker lid and cook on high pressure for 10 minutes. Allow for a natural release for 5 minutes, then quick release any remaining pressure.
  3. While the chicken is cooking, place the cubed potatoes in a large pot and cover with water. Bring to a boil and cook until tender, about 15-20 minutes.
  4. Drain the potatoes and return them to the pot. Add milk, butter, and sour cream (if using). Mash until smooth and creamy. Season with salt to taste.
  5. Slice the cooked chicken breasts and serve over a bed of mashed potatoes. Garnish with fresh parsley if desired.

Notes
