- 2 large chicken breasts, boneless and skinless
- 1 cup chicken broth
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
- 2 pounds potatoes, peeled and cubed
- 1/2 cup milk
- 4 tablespoons unsalted butter
- 1/4 cup sour cream (optional)
- Fresh parsley for garnish (optional)
Instructions
- Place the chicken breasts in the pressure cooker and season with garlic powder, onion powder, salt, and pepper. Pour in the chicken broth.
- Seal the pressure cooker lid and cook on high pressure for 10 minutes. Allow for a natural release for 5 minutes, then quick release any remaining pressure.
- While the chicken is cooking, place the cubed potatoes in a large pot and cover with water. Bring to a boil and cook until tender, about 15-20 minutes.
- Drain the potatoes and return them to the pot. Add milk, butter, and sour cream (if using). Mash until smooth and creamy. Season with salt to taste.
- Slice the cooked chicken breasts and serve over a bed of mashed potatoes. Garnish with fresh parsley if desired.
Notes
- For extra flavor, marinate the chicken in your favorite spices for a few hours before cooking.
- If you prefer a thicker sauce, you can thicken the cooking liquid after the chicken is done by reducing it over medium heat.
