Tender Chuck Roast in the Oven with Perfect Crispy Potatoes

Ingredients

  • 3 to 4 pounds chuck roast
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1 onion, chopped
  • 4 garlic cloves, minced
  • 2 cups beef broth
  • 1 cup red wine (optional)
  • 2 tablespoons Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 bay leaf
  • 2 pounds baby potatoes, halved
  • 2 tablespoons butter, melted
  • Fresh parsley for garnish (optional)

Instructions

  1. Preheat your oven to 325°F (160°C).
  2. Season the chuck roast generously with salt and pepper on all sides.
  3. In a large Dutch oven, heat olive oil over medium-high heat. Sear the chuck roast until browned on all sides, about 3-4 minutes per side. Remove from the pot and set aside.
  4. In the same pot, add chopped onion and cook until translucent, about 5 minutes. Add minced garlic and cook for an additional minute.
  5. Pour in the beef broth, red wine, Worcestershire sauce, thyme, rosemary, and bay leaf. Stir to combine.
  6. Return the chuck roast to the pot, cover, and place in the preheated oven. Cook for 3 to 4 hours, or until the meat is tender and easily pulls apart with a fork.
  7. While the roast is cooking, prepare the crispy roasted potatoes. In a bowl, toss halved baby potatoes with melted butter, salt, and pepper.
  8. Spread the potatoes on a baking sheet and roast in the oven for the last 45 minutes of the roast’s cooking time, or until golden and crispy.
  9. Once the roast is done, remove it from the oven and let it rest for 15 minutes before slicing.
  10. Serve the sliced chuck roast with roasted potatoes and drizzle with gravy. Garnish with fresh parsley if desired.

Notes

  • For extra flavor, marinate the chuck roast overnight in the fridge with your favorite herbs and spices.
  • If you prefer, you can make the gravy by whisking together the drippings from the roast with a bit of flour to thicken it.
