- 3 to 4 pounds chuck roast
- 2 tablespoons olive oil
- Salt and pepper to taste
- 1 onion, chopped
- 4 garlic cloves, minced
- 2 cups beef broth
- 1 cup red wine (optional)
- 2 tablespoons Worcestershire sauce
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 1 bay leaf
- 2 pounds baby potatoes, halved
- 2 tablespoons butter, melted
- Fresh parsley for garnish (optional)
Instructions
- Preheat your oven to 325°F (160°C).
- Season the chuck roast generously with salt and pepper on all sides.
- In a large Dutch oven, heat olive oil over medium-high heat. Sear the chuck roast until browned on all sides, about 3-4 minutes per side. Remove from the pot and set aside.
- In the same pot, add chopped onion and cook until translucent, about 5 minutes. Add minced garlic and cook for an additional minute.
- Pour in the beef broth, red wine, Worcestershire sauce, thyme, rosemary, and bay leaf. Stir to combine.
- Return the chuck roast to the pot, cover, and place in the preheated oven. Cook for 3 to 4 hours, or until the meat is tender and easily pulls apart with a fork.
- While the roast is cooking, prepare the crispy roasted potatoes. In a bowl, toss halved baby potatoes with melted butter, salt, and pepper.
- Spread the potatoes on a baking sheet and roast in the oven for the last 45 minutes of the roast’s cooking time, or until golden and crispy.
- Once the roast is done, remove it from the oven and let it rest for 15 minutes before slicing.
- Serve the sliced chuck roast with roasted potatoes and drizzle with gravy. Garnish with fresh parsley if desired.
Notes
- For extra flavor, marinate the chuck roast overnight in the fridge with your favorite herbs and spices.
- If you prefer, you can make the gravy by whisking together the drippings from the roast with a bit of flour to thicken it.
