Description
This classic comfort dish features a tender chuck roast slow-cooked to perfection, served alongside creamy mashed potatoes and sweet roasted carrots.

Instructions
- Preheat the oven to 325°F (165°C).
- Season the chuck roast with salt and black pepper on all sides.
- In a large oven-safe pot or Dutch oven, heat olive oil over medium-high heat. Sear the roast on all sides until browned, about 4-5 minutes per side.
- Add chopped onion and minced garlic to the pot. Sauté for 2-3 minutes until the onion is translucent.
- Pour in the beef broth, and add thyme and bay leaves. Bring to a simmer.
- Cover the pot with a lid and transfer to the oven. Cook for 3-4 hours, or until the meat is tender and easily pulls apart with a fork.
- While the roast is cooking, prepare the carrots. Toss the carrot sticks with olive oil, salt, and pepper. Spread them out on a baking sheet.
- When the roast has about 1 hour left to cook, add the carrots to the oven and roast for 30-40 minutes, until tender and caramelized.
- For the mashed potatoes, bring a large pot of salted water to a boil. Add the quartered potatoes and cook until fork-tender, about 15-20 minutes.
- Drain the potatoes and return them to the pot. Add butter and milk, and mash until creamy. Season with salt to taste.
- Once the roast is done, remove it from the oven and let it rest for 10-15 minutes before slicing.
- Serve the tender chuck roast with creamy mashed potatoes and roasted carrots.
Notes
- For additional flavor, you can add other root vegetables like parsnips or turnips to the roasting pan.
