Description

This classic comfort dish features a tender chuck roast slow-cooked to perfection, served alongside creamy mashed potatoes and sweet roasted carrots.

Instructions

  1. Preheat the oven to 325°F (165°C).
  2. Season the chuck roast with salt and black pepper on all sides.
  3. In a large oven-safe pot or Dutch oven, heat olive oil over medium-high heat. Sear the roast on all sides until browned, about 4-5 minutes per side.
  4. Add chopped onion and minced garlic to the pot. Sauté for 2-3 minutes until the onion is translucent.
  5. Pour in the beef broth, and add thyme and bay leaves. Bring to a simmer.
  6. Cover the pot with a lid and transfer to the oven. Cook for 3-4 hours, or until the meat is tender and easily pulls apart with a fork.
  7. While the roast is cooking, prepare the carrots. Toss the carrot sticks with olive oil, salt, and pepper. Spread them out on a baking sheet.
  8. When the roast has about 1 hour left to cook, add the carrots to the oven and roast for 30-40 minutes, until tender and caramelized.
  9. For the mashed potatoes, bring a large pot of salted water to a boil. Add the quartered potatoes and cook until fork-tender, about 15-20 minutes.
  10. Drain the potatoes and return them to the pot. Add butter and milk, and mash until creamy. Season with salt to taste.
  11. Once the roast is done, remove it from the oven and let it rest for 10-15 minutes before slicing.
  12. Serve the tender chuck roast with creamy mashed potatoes and roasted carrots.

Notes

  • For additional flavor, you can add other root vegetables like parsnips or turnips to the roasting pan.
