Ingredients

  • 2 cups potatoes
  • 1 cup ricotta cheese
  • 1/4 cup sugar
  • 1 teaspoon vanilla extract
  • 1 to 2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 2 tablespoons butter

Instructions

  1. In a mixing bowl, combine mashed potatoes, ricotta cheese, sugar, vanilla extract, and salt until smooth.
  2. Gradually add flour until a soft dough forms. The dough should be slightly sticky but manageable.
  3. On a floured surface, roll out the dough to about 1/4 inch thickness. Cut into squares or circles using a cookie cutter.
  4. Bring a large pot of salted water to a boil. Drop the dough pieces in batches and cook until they float to the surface, about 3-4 minutes.
  5. Using a slotted spoon, remove the pierogi and transfer to a plate.
  6. In a skillet, melt butter over medium heat. Add the cooked pierogi and fry until golden brown on both sides.
  7. Serve warm with sour cream and fresh fruit or jam if desired.
