- 2 cups potatoes
- 1 cup ricotta cheese
- 1/4 cup sugar
- 1 teaspoon vanilla extract
- 1 to 2 cups all-purpose flour
- 1/2 teaspoon salt
- 2 tablespoons butter

- to serve fresh fruit or jam
Instructions
- In a mixing bowl, combine mashed potatoes, ricotta cheese, sugar, vanilla extract, and salt until smooth.
- Gradually add flour until a soft dough forms. The dough should be slightly sticky but manageable.
- On a floured surface, roll out the dough to about 1/4 inch thickness. Cut into squares or circles using a cookie cutter.
- Bring a large pot of salted water to a boil. Drop the dough pieces in batches and cook until they float to the surface, about 3-4 minutes.
- Using a slotted spoon, remove the pierogi and transfer to a plate.
- In a skillet, melt butter over medium heat. Add the cooked pierogi and fry until golden brown on both sides.
- Serve warm with sour cream and fresh fruit or jam if desired.

- Feel free to experiment with different types of cheese for varied flavors.
- You can prepare the dough ahead of time and refrigerate it until you’re ready to cook.
