- 2 cups fresh strawberries, hulled and sliced
- 2 cups fresh blueberries
- 2 cups fresh raspberries
- 1 cup granulated sugar
- 1/4 cup fresh lemon juice
- 1/4 cup water
- 1 tablespoon cornstarch
- 1/2 teaspoon vanilla extract
- 1 cup heavy whipping cream
- 1/4 cup powdered sugar
- 1 teaspoon vanilla extract (for whipped cream)
- Fresh mint leaves for garnish
Instructions
- In a medium saucepan over medium heat, combine the strawberries, blueberries, raspberries, granulated sugar, lemon juice, and water. Cook for about 5-7 minutes until the fruits start to soften.
- In a small bowl, mix the cornstarch with a little bit of cold water to create a slurry. Stir this into the fruit mixture and cook for another 2-3 minutes until it thickens slightly. Remove from heat and stir in vanilla extract.
- Transfer the fruit mixture to a large serving bowl or individual dessert cups. Allow to cool to room temperature.
- In a separate bowl, whip the heavy cream until soft peaks form. Gradually add in powdered sugar and vanilla extract, continuing to whip until stiff peaks form.
- Once the fruit mixture is cool, top with generous dollops of whipped cream. Garnish with fresh mint leaves.
- Serve immediately or refrigerate until ready to serve.

- Feel free to mix and match with other seasonal fruits such as peaches or blackberries.
- This dessert can be prepared a few hours in advance; just add the whipped cream right before serving.
