- 1 cup all-purpose flour
- 2 large eggs
- 1 1/2 cups milk
- 1/4 teaspoon salt
- 2 tablespoons melted butter
- 1 tablespoon olive oil
- 2 cups fresh spinach, chopped
- 1 cup ricotta cheese
- 1/2 cup grated Parmesan cheese
- 1/2 teaspoon garlic powder
- Salt and pepper to taste
- 1/4 cup grated mozzarella cheese (for topping)
Instructions
- In a bowl, whisk together flour, eggs, milk, and salt until smooth. Stir in melted butter and set aside.
- Heat a non-stick skillet over medium heat and lightly grease with olive oil. Pour about 1/4 cup of batter into the skillet, swirling to coat the bottom evenly.
- Cook for 1-2 minutes until the edges start to lift and the bottom is golden brown. Flip and cook for another minute. Remove from skillet and repeat with remaining batter.
- In a separate pan, sauté chopped spinach over medium heat until wilted. Remove from heat and mix in ricotta, Parmesan, garlic powder, salt, and pepper.
- Place a spoonful of the spinach mixture onto each crepe and roll them up. Place in a greased baking dish.
- Sprinkle mozzarella cheese on top and bake in a preheated oven at 350°F (175°C) for 15-20 minutes until heated through and cheese is bubbly.
Notes
- You can add herbs like basil or parsley to the filling for extra flavor.
- These crepes can be made ahead and frozen. Just reheat in the oven when ready to serve.
