Ingredients

  • 1 whole chicken (34 lbs)
  • 2 tablespoons olive oil
  • 2 tablespoons smoked paprika
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 1 tablespoon brown sugar
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon cayenne pepper (optional for heat)
  • Wood chips for smoking (hickory or applewood recommended)

Instructions

  1. Prepare the chicken by removing any giblets and patting it dry with paper towels.
  2. In a small bowl, mix together the olive oil, smoked paprika, garlic powder, onion powder, brown sugar, salt, black pepper, and cayenne pepper (if using) to create a rub.
  3. Rub the spice mixture all over the chicken, making sure to get under the skin and inside the cavity.
  4. Cover the chicken and let it marinate in the refrigerator for at least 1 hour, or overnight for more flavor.
  5. Preheat your smoker to 225°F (107°C).
  6. Add wood chips to the smoker according to the manufacturer’s instructions.
  7. Place the chicken on the smoker grate, breast side up, and smoke for about 3-4 hours, or until the internal temperature reaches 165°F (74°C).
  8. Remove the chicken from the smoker and let it rest for 15 minutes before carving.
