- 1 whole chicken (3–4 lbs)
- 2 tablespoons olive oil
- 2 tablespoons smoked paprika
- 1 tablespoon garlic powder
- 1 tablespoon onion powder
- 1 tablespoon brown sugar
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 teaspoon cayenne pepper (optional for heat)
- Wood chips for smoking (hickory or applewood recommended)
Instructions
- Prepare the chicken by removing any giblets and patting it dry with paper towels.
- In a small bowl, mix together the olive oil, smoked paprika, garlic powder, onion powder, brown sugar, salt, black pepper, and cayenne pepper (if using) to create a rub.
- Rub the spice mixture all over the chicken, making sure to get under the skin and inside the cavity.
- Cover the chicken and let it marinate in the refrigerator for at least 1 hour, or overnight for more flavor.
- Preheat your smoker to 225°F (107°C).
- Add wood chips to the smoker according to the manufacturer’s instructions.
- Place the chicken on the smoker grate, breast side up, and smoke for about 3-4 hours, or until the internal temperature reaches 165°F (74°C).
- Remove the chicken from the smoker and let it rest for 15 minutes before carving.
