Instructions
- In a large pot, heat olive oil over medium heat. Add minced garlic and grated ginger, cooking until fragrant.
- Add chicken breast to the pot and cook until browned on all sides, about 5-7 minutes.
- Stir in chopped cabbage, soy sauce, salt, and pepper. Cook for an additional 5-10 minutes, until the cabbage is tender and the chicken is cooked through.
- In a separate pot, bring 4 cups of water to a boil. Add white rice and a pinch of salt. Reduce heat to low, cover, and simmer for 18-20 minutes, or until rice is fluffy and water is absorbed.
- Serve the chicken and cabbage mixture over the steamed white rice.
Notes
- Feel free to add other vegetables like carrots or bell peppers for extra flavor and nutrition.
- To enhance flavor, marinate the chicken in soy sauce and ginger for at least 30 minutes before cooking.
