- 1 lb ground beef or turkey
- 1 packet taco seasoning
- 1 can (15 oz) black beans, rinsed and drained
- 1 cup corn (fresh, frozen, or canned)
- 1 cup cherry tomatoes, halved
- 1 bell pepper, diced
- 1/2 red onion, diced
- 1 cup shredded cheddar cheese
- 1/2 cup Zesty French dressing
- Salt and pepper to taste
- Fresh cilantro for garnish (optional)
Instructions
- Cook the rotini pasta according to package instructions. Drain and set aside to cool.
- In a skillet over medium heat, cook the ground beef or turkey until browned. Drain excess fat.
- Stir in the taco seasoning with the cooked meat and follow package instructions, usually adding a bit of water and simmering for a few minutes.
- In a large bowl, combine the cooked pasta, seasoned meat, black beans, corn, cherry tomatoes, bell pepper, red onion, and cheddar cheese.
- Drizzle the Zesty French dressing over the salad and toss to combine. Season with salt and pepper to taste.
- Chill in the refrigerator for at least 30 minutes before serving to allow the flavors to meld.
