Ingredients

  • 2 cups sauerkraut, drained and rinsed
  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 3 medium potatoes, diced
  • 4 cups vegetable or chicken broth
  • 1 cup carrots, sliced
  • 1 cup diced tomatoes (canned or fresh)
  • 1 teaspoon caraway seeds
  • Salt and pepper to taste
  • Optional: 1 cup diced smoked sausage or ham
  • Fresh parsley for garnish

Instructions

  1. In a large pot, heat olive oil over medium heat. Add the chopped onion and garlic, sauté until the onion is translucent.
  2. Add the diced potatoes, carrots, and sauerkraut to the pot. Stir well.
  3. Pour in the broth and add the diced tomatoes and caraway seeds. Bring to a boil.
  4. Reduce heat and let simmer for about 20-30 minutes, or until the potatoes are tender.
  5. If using, add the smoked sausage or ham, and cook for an additional 5 minutes.
  6. Season with salt and pepper to taste.
  7. Serve hot, garnished with fresh parsley.
