- 2 cups sauerkraut, drained and rinsed
- 1 tablespoon olive oil
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 3 medium potatoes, diced
- 4 cups vegetable or chicken broth
- 1 cup carrots, sliced
- 1 cup diced tomatoes (canned or fresh)
- 1 teaspoon caraway seeds
- Salt and pepper to taste
- Optional: 1 cup diced smoked sausage or ham
- Fresh parsley for garnish
Instructions
- In a large pot, heat olive oil over medium heat. Add the chopped onion and garlic, sauté until the onion is translucent.
- Add the diced potatoes, carrots, and sauerkraut to the pot. Stir well.
- Pour in the broth and add the diced tomatoes and caraway seeds. Bring to a boil.
- Reduce heat and let simmer for about 20-30 minutes, or until the potatoes are tender.
- If using, add the smoked sausage or ham, and cook for an additional 5 minutes.
- Season with salt and pepper to taste.
- Serve hot, garnished with fresh parsley.
Notes
- Feel free to customize the soup with your favorite vegetables.
- For a vegetarian version, omit the meat and use vegetable broth.
