This rich and aromatic Indian chicken curry is bursting with flavors and pairs perfectly with soft naan and crispy fries.

- 500g chicken thighs
- 1 large onion
- 4 cloves garlic
- 1 inch piece ginger
- 1 cup tomato puree
- 1 cup coconut milk
- 3 tablespoons vegetable oil
- 2 tablespoons curry powder
- 1 teaspoon garam masala
- to taste salt
- for garnish fresh cilantro
- 4 pieces naan bread
- 3 medium potatoes
Instructions
- In a large pot, heat the vegetable oil over medium heat. Add the chopped onion and sauté until golden brown.
- Stir in the garlic and ginger, and cook for another minute until fragrant.
- Add the chicken pieces to the pot and cook until browned on all sides.
- Stir in the curry powder, garam masala, and salt. Cook for 2 minutes, stirring frequently.
- Add the tomato puree and coconut milk. Bring to a simmer and cook for 20-25 minutes until the chicken is cooked through and the sauce has thickened.
- While the curry simmers, prepare the fries: heat oil in a deep pan and fry the potato strips until golden and crispy. Drain on paper towels and season with salt.
- Serve the chicken curry hot, garnished with fresh cilantro, alongside soft naan and crispy fries.
