Description

This rich and aromatic Indian chicken curry is bursting with flavors and pairs perfectly with soft naan and crispy fries.


Ingredients

  • 500g chicken thighs
  • 1 large onion
  • 4 cloves garlic
  • 1 inch piece ginger
  • 1 cup tomato puree
  • 1 cup coconut milk
  • 3 tablespoons vegetable oil
  • 2 tablespoons curry powder
  • 1 teaspoon garam masala
  • to taste salt
  • for garnish fresh cilantro
  • 4 pieces naan bread
  • 3 medium potatoes

Instructions

  1. In a large pot, heat the vegetable oil over medium heat. Add the chopped onion and sauté until golden brown.
  2. Stir in the garlic and ginger, and cook for another minute until fragrant.
  3. Add the chicken pieces to the pot and cook until browned on all sides.
  4. Stir in the curry powder, garam masala, and salt. Cook for 2 minutes, stirring frequently.
  5. Add the tomato puree and coconut milk. Bring to a simmer and cook for 20-25 minutes until the chicken is cooked through and the sauce has thickened.
  6. While the curry simmers, prepare the fries: heat oil in a deep pan and fry the potato strips until golden and crispy. Drain on paper towels and season with salt.
  7. Serve the chicken curry hot, garnished with fresh cilantro, alongside soft naan and crispy fries.
