Description

Ingredients

  • 2 cups cooked rice (preferably day-old)
  • 1 cup mixed vegetables (carrots, peas, bell peppers, etc.)
  • 2 eggs
  • 2 tablespoons soy sauce
  • 1 tablespoon vegetable oil
  • 1 teaspoon sesame oil
  • 2 green onions, chopped
  • Salt and pepper to taste

Instructions

  1. Heat vegetable oil in a large skillet or wok over medium-high heat.
  2. Add the mixed vegetables and stir-fry for about 3-4 minutes until they are tender.
  3. Push the vegetables to one side of the pan and crack the eggs into the empty side. Scramble the eggs until fully cooked.
  4. Add the cooked rice to the pan and pour in the soy sauce and sesame oil. Stir everything together until evenly mixed and heated through.
  5. Add green onions, salt, and pepper to taste. Stir well and serve hot.

Notes

  • For added flavor, consider adding garlic or ginger to the stir-fry.
