- 2 cups cooked rice (preferably day-old)
- 1 cup mixed vegetables (carrots, peas, bell peppers, etc.)
- 2 eggs
- 2 tablespoons soy sauce
- 1 tablespoon vegetable oil
- 1 teaspoon sesame oil
- 2 green onions, chopped
- Salt and pepper to taste
Instructions
- Heat vegetable oil in a large skillet or wok over medium-high heat.
- Add the mixed vegetables and stir-fry for about 3-4 minutes until they are tender.
- Push the vegetables to one side of the pan and crack the eggs into the empty side. Scramble the eggs until fully cooked.
- Add the cooked rice to the pan and pour in the soy sauce and sesame oil. Stir everything together until evenly mixed and heated through.
- Add green onions, salt, and pepper to taste. Stir well and serve hot.
Notes
- For added flavor, consider adding garlic or ginger to the stir-fry.
- You can substitute the vegetables with your favorites or whatever you have on hand.
