- 8 ounces rotini pasta
- 1 cup cooked and crumbled ground beef or turkey
- 1 cup cherry tomatoes, halved
- 1 cup corn, drained
- 1 cup black beans, rinsed and drained
- 1/2 cup diced red onion
- 1/2 cup sliced black olives
- 1 cup shredded cheddar cheese
- 1 packet ranch dressing mix
- 1 cup mayonnaise
- 1 tablespoon lime juice
- 1 teaspoon chili powder
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
- Cook the rotini pasta according to package instructions. Drain and rinse with cold water to cool.
- In a large bowl, combine the cooked pasta, ground beef or turkey, cherry tomatoes, corn, black beans, red onion, black olives, and cheddar cheese.
- In a separate bowl, mix the ranch dressing mix, mayonnaise, lime juice, chili powder, salt, and pepper until smooth.
- Pour the dressing over the pasta salad and toss until everything is evenly coated.
- Chill the salad in the refrigerator for at least 30 minutes to allow flavors to meld.
- Before serving, give the salad a good stir and garnish with fresh cilantro.
