  • 8 ounces rotini pasta
  • 1 cup cooked and crumbled ground beef or turkey
  • 1 cup cherry tomatoes, halved
  • 1 cup corn, drained
  • 1 cup black beans, rinsed and drained
  • 1/2 cup diced red onion
  • 1/2 cup sliced black olives
  • 1 cup shredded cheddar cheese
  • 1 packet ranch dressing mix
  • 1 cup mayonnaise
  • 1 tablespoon lime juice
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. Cook the rotini pasta according to package instructions. Drain and rinse with cold water to cool.
  2. In a large bowl, combine the cooked pasta, ground beef or turkey, cherry tomatoes, corn, black beans, red onion, black olives, and cheddar cheese.
  3. In a separate bowl, mix the ranch dressing mix, mayonnaise, lime juice, chili powder, salt, and pepper until smooth.
  4. Pour the dressing over the pasta salad and toss until everything is evenly coated.
  5. Chill the salad in the refrigerator for at least 30 minutes to allow flavors to meld.
