- 1 cup Quinoa
- 2 cups Vegetable broth
- 1 Bell pepper
- 1 Zucchini
- 1 cup Cherry tomatoes
- 2 tablespoons Olive oil
- 2 cloves Garlic
- 2 cups Spinach

- 1/4 cup Parmesan cheese
Instructions
- In a medium saucepan, combine quinoa and vegetable broth. Bring to a boil, then reduce heat and simmer, covered, for about 15 minutes until liquid is absorbed.
- In a large skillet, heat olive oil over medium heat. Add garlic and sauté for about 1 minute until fragrant.
- Add diced bell pepper and zucchini to the skillet, cooking for 5 minutes until they start to soften.
- Stir in the cherry tomatoes and spinach, cooking for another 3-4 minutes until spinach wilts.
- Fluff the cooked quinoa with a fork and add it to the skillet with the vegetables. Mix well to combine.
- Season with salt and pepper to taste. If desired, sprinkle with grated Parmesan cheese before serving.
