This quick and delicious pasta taco salad is a perfect fusion of flavors, combining your favorite taco ingredients with pasta for a meal that’s ready in just 25 minutes.

- 8 oz (225g) rotini pasta
- 1 lb (450g) ground beef or turkey
- 1 packet taco seasoning
- 1 can (15 oz) black beans, drained and rinsed
- 1 cup corn (fresh, frozen, or canned)
- 1 cup cherry tomatoes, halved
- 1 cup shredded lettuce
- 1 cup shredded cheese (cheddar or Mexican blend)
- 1/2 cup salsa
- 1/4 cup sour cream
- Fresh cilantro for garnish (optional)
- Salt and pepper to taste
Instructions
- Cook the rotini pasta according to package instructions. Drain and set aside.
- In a large skillet, brown the ground beef or turkey over medium heat until fully cooked. Drain any excess fat.
- Add the taco seasoning to the meat along with 1/4 cup of water. Stir to combine and simmer for 5 minutes.
- In a large bowl, combine the cooked pasta, seasoned meat, black beans, corn, cherry tomatoes, shredded lettuce, and shredded cheese. Mix well.
- Pour salsa over the pasta mixture and fold gently to combine. Adjust seasoning with salt and pepper if needed.
- Serve topped with sour cream and garnish with fresh cilantro, if desired.
Notes
- Feel free to customize with your favorite taco toppings such as jalapeños, avocado, or olives.
- This salad can be made ahead of time and stored in the refrigerator for up to 2 days.
