This quick and delicious pasta taco salad is a perfect fusion of flavors, combining your favorite taco ingredients with pasta for a meal that’s ready in just 25 minutes.


Ingredients

  • 8 oz (225g) rotini pasta
  • 1 lb (450g) ground beef or turkey
  • 1 packet taco seasoning
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup corn (fresh, frozen, or canned)
  • 1 cup cherry tomatoes, halved
  • 1 cup shredded lettuce
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1/2 cup salsa
  • 1/4 cup sour cream
  • Fresh cilantro for garnish (optional)
  • Salt and pepper to taste

Instructions

  1. Cook the rotini pasta according to package instructions. Drain and set aside.
  2. In a large skillet, brown the ground beef or turkey over medium heat until fully cooked. Drain any excess fat.
  3. Add the taco seasoning to the meat along with 1/4 cup of water. Stir to combine and simmer for 5 minutes.
  4. In a large bowl, combine the cooked pasta, seasoned meat, black beans, corn, cherry tomatoes, shredded lettuce, and shredded cheese. Mix well.
  5. Pour salsa over the pasta mixture and fold gently to combine. Adjust seasoning with salt and pepper if needed.
  6. Serve topped with sour cream and garnish with fresh cilantro, if desired.

Notes

  • Feel free to customize with your favorite taco toppings such as jalapeños, avocado, or olives.
  • This salad can be made ahead of time and stored in the refrigerator for up to 2 days.
