- 8 oz (225 g) rotini or elbow pasta
- 1 cup (150 g) cherry tomatoes, halved
- 1 cup (150 g) corn, drained and rinsed
- 1 cup (150 g) black beans, drained and rinsed
- 1 cup (150 g) shredded cheddar cheese
- 1 cup (150 g) diced bell peppers (any color)
- 1/2 cup (75 g) diced red onion
- 1 cup (240 ml) ranch dressing
- 1 packet taco seasoning (about 1 oz/28 g)
- 2 cups (50 g) crushed Doritos (nacho cheese or cool ranch)
- Fresh cilantro, for garnish (optional)
Instructions
- Cook the pasta according to package instructions until al dente. Drain and rinse under cold water to cool.
- In a large bowl, combine the cooked pasta, cherry tomatoes, corn, black beans, cheddar cheese, bell peppers, and red onion.
- In a separate small bowl, mix the ranch dressing with the taco seasoning until well combined.
- Pour the dressing over the pasta salad mixture and toss until everything is evenly coated.
- Gently fold in the crushed Doritos, reserving some for topping.
- Serve immediately or refrigerate for 30 minutes to let the flavors meld.
- Top with additional crushed Doritos and fresh cilantro before serving.
