- 2 large russet potatoes, peeled and grated
- 1 small onion, grated
- 1 large egg
- 1/4 cup all-purpose flour
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- Vegetable oil for frying
- Sour cream for serving
- Chives or green onions for garnish (optional)
Instructions
- In a large bowl, combine the grated potatoes and onion. Squeeze out excess moisture using a clean kitchen towel or cheesecloth.
- Add the egg, flour, salt, and black pepper to the potato mixture. Mix until well combined.
- Heat a skillet over medium-high heat and add enough vegetable oil to cover the bottom.
- Scoop about 1/4 cup of the potato mixture and flatten it into a patty. Place it in the hot oil.
- Fry the pancakes for about 4-5 minutes on each side, or until golden brown and crispy.
- Remove the pancakes from the skillet and drain on paper towels. Repeat with the remaining mixture.
- Serve hot with a dollop of sour cream on top and garnish with chives or green onions if desired.
