  • 2 large russet potatoes, peeled and grated
  • 1 small onion, grated
  • 1 large egg
  • 1/4 cup all-purpose flour
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • Vegetable oil for frying
  • Sour cream for serving
  • Chives or green onions for garnish (optional)

Instructions

  1. In a large bowl, combine the grated potatoes and onion. Squeeze out excess moisture using a clean kitchen towel or cheesecloth.
  2. Add the egg, flour, salt, and black pepper to the potato mixture. Mix until well combined.
  3. Heat a skillet over medium-high heat and add enough vegetable oil to cover the bottom.
  4. Scoop about 1/4 cup of the potato mixture and flatten it into a patty. Place it in the hot oil.
  5. Fry the pancakes for about 4-5 minutes on each side, or until golden brown and crispy.
  6. Remove the pancakes from the skillet and drain on paper towels. Repeat with the remaining mixture.
  7. Serve hot with a dollop of sour cream on top and garnish with chives or green onions if desired.
