- 2 cups mashed potatoes
- 1 cup all-purpose flour
- 1 large egg
- Salt to taste
- 1 cup beef cracklings, chopped
- Butter for cooking
Instructions
- In a large bowl, combine the mashed potatoes, flour, egg, and salt. Mix until a dough forms.
- Take a small portion of the dough and flatten it in your hand. Place a teaspoon of beef cracklings in the center.
- Fold the dough over to create a dumpling and seal the edges tightly.
- Bring a large pot of salted water to a boil. Drop the dumplings in batches into the boiling water.
- Cook until they float to the surface, then let them cook for an additional 2-3 minutes.
- Remove the dumplings with a slotted spoon and set aside.
- In a skillet, melt some butter over medium heat. Add the cooked dumplings and sauté until golden and crispy.
Notes
- For extra flavor, you can add herbs such as parsley or chives to the potato mixture.
- Serve with sour cream or your favorite dipping sauce.
