Description

Delicious homemade pierogi filled with creamy potato and cheese filling, perfect for any occasion.


Ingredients

  • 2 cups all-purpose flour
  • 1 large egg
  • 1/2 teaspoon salt
  • 1/4 cup sour cream
  • 1/4 cup water
  • 2 cups mashed potatoes
  • 1 cup shredded cheese (cheddar recommended)
  • Salt and pepper to taste
  • Butter for frying
  • Chopped onions for garnish (optional)

Instructions

  1. In a large bowl, combine flour and salt. Make a well in the center and add the egg, sour cream, and water. Mix until a dough forms.
  2. Knead the dough on a floured surface for about 5 minutes until smooth. Wrap in plastic wrap and let it rest for 30 minutes.
  3. In a separate bowl, mix the mashed potatoes and shredded cheese. Season with salt and pepper to taste.
  4. Roll out the dough on a floured surface to about 1/8 inch thick. Cut into circles using a cookie cutter or glass.
  5. Place a spoonful of the potato and cheese filling in the center of each circle. Fold the dough over to create a half-moon shape, sealing the edges by pressing with your fingers or a fork.
  6. Bring a large pot of salted water to a boil. Add the pierogi in batches and cook until they float to the surface, about 5 minutes.
  7. Remove with a slotted spoon and set aside. In a skillet, melt butter and fry the pierogi until golden brown on both sides.
  8. Serve hot, garnished with chopped onions if desired.
