A hearty and traditional Polish soup made with beef tripe, vegetables, and aromatic spices that will warm you up on a chilly day.

- 1 lb beef tripe, cleaned and cut into strips
- 1 large onion, chopped
- 2 cloves garlic, minced
- 2 carrots, sliced
- 1 parsnip, sliced
- 2 stalks celery, sliced
- 1 bay leaf
- 4 cups beef broth
- 1 teaspoon marjoram
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- In a large pot, bring water to a boil and add the cleaned beef tripe. Boil for 10 minutes, then drain and rinse under cold water.
- In the same pot, add the beef broth, tripe, onion, garlic, carrots, parsnip, celery, bay leaf, and marjoram.
- Bring to a boil, then reduce heat and simmer for about 2 hours, or until the tripe is tender.
- Season with salt and pepper to taste.
- Remove the bay leaf before serving.
- Garnish with fresh parsley and serve hot.
Notes
- Make sure the tripe is well-cleaned before cooking to avoid any unpleasant odors.
- You can add other vegetables like potatoes or bell peppers for extra flavor.
- This soup can be made a day ahead and reheated, as the flavors deepen overnight.
