Ingredients

  • 1 lb beef tripe, cleaned and cut into strips
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 2 carrots, sliced
  • 1 parsnip, sliced
  • 2 stalks celery, sliced
  • 1 bay leaf
  • 4 cups beef broth
  • 1 teaspoon marjoram
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. In a large pot, bring water to a boil and add the cleaned beef tripe. Boil for 10 minutes, then drain and rinse under cold water.
  2. In the same pot, add the beef broth, tripe, onion, garlic, carrots, parsnip, celery, bay leaf, and marjoram.
  3. Bring to a boil, then reduce heat and simmer for about 2 hours, or until the tripe is tender.
  4. Season with salt and pepper to taste.
  5. Remove the bay leaf before serving.
  6. Garnish with fresh parsley and serve hot.

Notes

  • Make sure the tripe is well-cleaned before cooking to avoid any unpleasant odors.
