Instructions

  1. Fill a medium saucepan with water and bring it to a gentle simmer over medium heat.
  2. Add vinegar to the water (if using) to help the eggs hold their shape.
  3. Crack each egg into a small bowl. This makes it easier to slide them into the water.
  4. Create a gentle whirlpool in the simmering water by stirring with a spoon, then carefully slide one egg into the center.
  5. Cook the egg for about 3-4 minutes for a runny yolk or longer for a firmer yolk. Use a slotted spoon to remove the egg and drain it on paper towels.
  6. Repeat with the second egg.
  7. While the eggs are cooking, toast the slices of bread to your desired crispiness.
  8. Place the toasted bread on plates, and top each slice with a poached egg.
  9. Season with salt and pepper to taste, and garnish with fresh herbs if desired.
