Instructions
- Fill a medium saucepan with water and bring it to a gentle simmer over medium heat.
- Add vinegar to the water (if using) to help the eggs hold their shape.
- Crack each egg into a small bowl. This makes it easier to slide them into the water.
- Create a gentle whirlpool in the simmering water by stirring with a spoon, then carefully slide one egg into the center.
- Cook the egg for about 3-4 minutes for a runny yolk or longer for a firmer yolk. Use a slotted spoon to remove the egg and drain it on paper towels.
- Repeat with the second egg.
- While the eggs are cooking, toast the slices of bread to your desired crispiness.
- Place the toasted bread on plates, and top each slice with a poached egg.
- Season with salt and pepper to taste, and garnish with fresh herbs if desired.
