Ingredients

  • 1 cup granulated sugar
  • 1/4 cup lemon juice
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon nutmeg (optional)
  • 1/2 teaspoon vanilla extract
  • 1 package (1.75 oz) fruit pectin

Instructions

  1. In a large pot, combine the chopped plums, sugar, and lemon juice. Let sit for about 30 minutes to allow the juices to release.
  2. Add the ground cinnamon and nutmeg (if using) to the mixture. Stir well to combine.
  3. Bring the mixture to a boil over medium-high heat, stirring frequently. Once boiling, add the fruit pectin and continue to boil for 1-2 minutes, or until the jam thickens.
  4. Remove from heat and stir in the vanilla extract.
  5. Pour the hot jam into sterilized jars, leaving about 1/4 inch of headspace. Seal the jars with lids.
  6. Process the jars in a boiling water bath for 10 minutes to ensure they are sealed properly.
  7. Let the jars cool completely at room temperature before storing. The jam can be stored in the refrigerator for up to a month or in a cool, dark place for up to a year.
