Instructions
- Preheat your oven to 350°F (175°C).
- In a 9-inch round cake pan, melt the butter in the oven. Once melted, remove from the oven and sprinkle the brown sugar evenly over the butter.
- Arrange the pineapple slices on top of the brown sugar mixture and place a maraschino cherry in the center of each pineapple slice.
- In a mixing bowl, whisk together the flour, baking powder, baking soda, and salt.
- In another bowl, cream together the granulated sugar and the remaining melted butter. Add in the milk, sour cream, vanilla extract, and egg, mixing until smooth.
- Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
- Pour the batter over the pineapple and sugar mixture in the pan, spreading evenly.
- Bake for 35-40 minutes or until a toothpick inserted in the center comes out clean.
- Remove from the oven and let cool for 10 minutes. Then, carefully invert the cake onto a serving plate. Serve warm or at room temperature.
