Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a 9-inch round cake pan, melt the butter in the oven. Once melted, remove from the oven and sprinkle the brown sugar evenly over the butter.
  3. Arrange the pineapple slices on top of the brown sugar mixture and place a maraschino cherry in the center of each pineapple slice.
  4. In a mixing bowl, whisk together the flour, baking powder, baking soda, and salt.
  5. In another bowl, cream together the granulated sugar and the remaining melted butter. Add in the milk, sour cream, vanilla extract, and egg, mixing until smooth.
  6. Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
  7. Pour the batter over the pineapple and sugar mixture in the pan, spreading evenly.
  8. Bake for 35-40 minutes or until a toothpick inserted in the center comes out clean.
  9. Remove from the oven and let cool for 10 minutes. Then, carefully invert the cake onto a serving plate. Serve warm or at room temperature.
