- 4 cups chicken or vegetable broth
- 2 cups diced pickles (preferably dill pickles)
- 1 cup diced potatoes
- 1 cup diced carrots
- 1/2 cup chopped onion
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- 1 teaspoon dill weed
- Salt and pepper to taste
- 1 cup sour cream or Greek yogurt (for garnish)
- Fresh dill for garnish
Instructions
- In a large pot, heat the olive oil over medium heat. Add the chopped onions and garlic, sauté until translucent.
- Add the diced potatoes and carrots, cooking for about 5 minutes until slightly softened.
- Pour in the broth and bring to a boil. Reduce heat and simmer for 15 minutes or until the vegetables are tender.
- Stir in the diced pickles and dill weed. Simmer for an additional 5 minutes.
- Season with salt and pepper to taste.
- Serve hot, garnished with a dollop of sour cream or Greek yogurt and a sprinkle of fresh dill.
