  • 2 cups diced pickles (preferably dill pickles)
  • 1 cup diced potatoes
  • 1 cup diced carrots
  • 1/2 cup chopped onion
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon dill weed
  • Salt and pepper to taste
  • 1 cup sour cream or Greek yogurt (for garnish)
  • Fresh dill for garnish

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the chopped onions and garlic, sauté until translucent.
  2. Add the diced potatoes and carrots, cooking for about 5 minutes until slightly softened.
  3. Pour in the broth and bring to a boil. Reduce heat and simmer for 15 minutes or until the vegetables are tender.
  4. Stir in the diced pickles and dill weed. Simmer for an additional 5 minutes.
  5. Season with salt and pepper to taste.
  6. Serve hot, garnished with a dollop of sour cream or Greek yogurt and a sprinkle of fresh dill.
