- 1 cup pearl barley
- 1 tablespoon olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 3 carrots, diced
- 2 celery stalks, diced
- 1 teaspoon dried thyme
- 6 cups vegetable broth
- 1 can (14.5 oz) diced tomatoes, undrained
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Rinse the pearl barley under cold water and set aside.
- In a large pot, heat the olive oil over medium heat. Add the diced onion and garlic, sautéing until the onion is translucent.
- Add the carrots and celery to the pot, cooking for about 5 minutes until softened.
- Stir in the dried thyme and pearl barley, mixing well.
- Pour in the vegetable broth and diced tomatoes. Bring to a boil, then reduce the heat to low.
- Cover and simmer for about 40-50 minutes, or until the barley is tender.
- Season with salt and pepper to taste.
- Serve hot, garnished with fresh parsley.
Notes
- You can add any vegetables you have on hand, such as zucchini or spinach.
- For added protein, consider including beans or cooked chicken.
