Ingredients

  • 1 cup pearl barley
  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 3 carrots, diced
  • 2 celery stalks, diced
  • 1 teaspoon dried thyme
  • 6 cups vegetable broth
  • 1 can (14.5 oz) diced tomatoes, undrained
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Rinse the pearl barley under cold water and set aside.
  2. In a large pot, heat the olive oil over medium heat. Add the diced onion and garlic, sautéing until the onion is translucent.
  3. Add the carrots and celery to the pot, cooking for about 5 minutes until softened.
  4. Stir in the dried thyme and pearl barley, mixing well.
  5. Pour in the vegetable broth and diced tomatoes. Bring to a boil, then reduce the heat to low.
  6. Cover and simmer for about 40-50 minutes, or until the barley is tender.
  7. Season with salt and pepper to taste.
  8. Serve hot, garnished with fresh parsley.

Notes

  • You can add any vegetables you have on hand, such as zucchini or spinach.
  • For added protein, consider including beans or cooked chicken.
