Ingredients

  • 1 cup all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 3 large eggs
  • 1/2 cup milk
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 2 cups heavy cream
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract (for the cream)
  • Fresh fruit or chocolate shavings for garnish (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.
  2. In a mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
  3. Add the eggs one at a time, mixing well after each addition. Stir in the milk and vanilla extract.
  4. In another bowl, whisk together the flour, baking powder, and salt. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  5. Pour the batter into the prepared cake pan and smooth the top. Bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean.
  6. Once baked, remove the cake from the oven and let it cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
  7. While the cake is cooling, prepare the cream. In a large bowl, beat the heavy cream with powdered sugar and vanilla extract until stiff peaks form.
  8. Once the cake is completely cooled, slice it in half horizontally to create two layers.
  9. Spread a generous amount of whipped cream on the top of the bottom layer, then place the second layer on top.
  10. Top the cake with the remaining whipped cream and garnish with fresh fruit or chocolate shavings if desired.
  11. Chill the cake in the refrigerator for at least 1 hour before serving to allow the flavors to meld.

Notes

  • For added flavor, you can incorporate lemon or almond extract into the cake batter.
  • This cake can be made a day in advance and stored in the refrigerator.
  • Feel free to experiment with different flavorings for the whipped cream.
