A traditional recipe for Old Polish Gingerbread that features warm spices and a rich, sweet flavor, perfect for holiday celebrations.

- 3 cups all-purpose flour
- 1 teaspoon baking soda
- 1 tablespoon ground ginger
- 1 tablespoon ground cinnamon
- 1/2 teaspoon ground cloves
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, softened
- 1 cup brown sugar, packed
- 1/2 cup molasses
- 1 large egg
- 1 teaspoon vanilla extract
- 1/2 cup chopped nuts (optional)
- 1/2 cup raisins or currants (optional)
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a medium bowl, whisk together the flour, baking soda, ginger, cinnamon, cloves, and salt. Set aside.
- In a large bowl, cream together the softened butter and brown sugar until light and fluffy.
- Add the molasses, egg, and vanilla extract to the butter mixture and mix until well combined.
- Gradually add the dry ingredients to the wet mixture, mixing until just combined. If desired, fold in the chopped nuts and raisins or currants.
- Scoop tablespoons of dough onto the prepared baking sheet, leaving space between each cookie.
- Bake in the preheated oven for 10-12 minutes, or until the edges are set and the centers are slightly soft.
- Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
Notes
- For a more traditional flavor, consider aging the dough for a few days in the refrigerator before baking.
- These gingerbread cookies can be decorated with icing or left plain for a rustic presentation.
