- 1 1/2 cups graham cracker crumbs
- 1/4 cup granulated sugar
- 1/2 cup unsalted butter, melted
- 4 (8-ounce) packages cream cheese, softened
- 1 cup granulated sugar
- 1 teaspoon vanilla extract
- 4 large eggs
- 1/2 cup sour cream
- 1 tablespoon all-purpose flour
- 1 tablespoon lemon juice
Instructions
- Preheat your oven to 325°F (160°C).
- In a bowl, combine graham cracker crumbs, 1/4 cup sugar, and melted butter. Press the mixture into the bottom of a 9-inch springform pan to form the crust.
- In a large mixing bowl, beat the softened cream cheese until smooth. Gradually add 1 cup sugar and vanilla extract, mixing well.
- Add the eggs one at a time, mixing just until combined. Be careful not to overmix.
- Stir in sour cream, flour, and lemon juice until the mixture is smooth.
- Pour the cream cheese mixture over the prepared crust in the springform pan.
- Bake for 60 minutes, or until the center is set but still slightly jiggly.
- Turn off the oven and let the cheesecake cool in the oven with the door slightly ajar for 1 hour.
- Remove from the oven and refrigerate for at least 4 hours or overnight before serving.
Notes
- For a smoother cheesecake, make sure all ingredients are at room temperature before mixing.
- You can add a fruit topping or chocolate ganache for added flavor.
