  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter, melted
  • 4 (8-ounce) packages cream cheese, softened
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 4 large eggs
  • 1/2 cup sour cream
  • 1 tablespoon all-purpose flour
  • 1 tablespoon lemon juice

Instructions

  1. Preheat your oven to 325°F (160°C).
  2. In a bowl, combine graham cracker crumbs, 1/4 cup sugar, and melted butter. Press the mixture into the bottom of a 9-inch springform pan to form the crust.
  3. In a large mixing bowl, beat the softened cream cheese until smooth. Gradually add 1 cup sugar and vanilla extract, mixing well.
  4. Add the eggs one at a time, mixing just until combined. Be careful not to overmix.
  5. Stir in sour cream, flour, and lemon juice until the mixture is smooth.
  6. Pour the cream cheese mixture over the prepared crust in the springform pan.
  7. Bake for 60 minutes, or until the center is set but still slightly jiggly.
  8. Turn off the oven and let the cheesecake cool in the oven with the door slightly ajar for 1 hour.
  9. Remove from the oven and refrigerate for at least 4 hours or overnight before serving.
