- 8 oz fettuccine or pasta of choice
- 2 boneless, skinless chicken breasts
- Salt and pepper to taste
- 1 tablespoon olive oil
- 3 cloves garlic, minced
- 1 teaspoon Italian seasoning
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 1/4 cup sun-dried tomatoes, chopped
- 1 cup spinach, fresh
- Fresh basil for garnish
Instructions
- Cook the fettuccine according to package instructions. Drain and set aside.
- Season chicken breasts with salt and pepper. In a large skillet, heat olive oil over medium-high heat. Add chicken and cook until golden brown and cooked through, about 6-7 minutes per side. Remove from skillet and let rest before slicing.
- In the same skillet, add garlic and Italian seasoning. Sauté for about 30 seconds until fragrant.
- Pour in the heavy cream and bring to a simmer. Stir in Parmesan cheese until melted and smooth.
- Add sun-dried tomatoes and spinach to the sauce. Cook until spinach is wilted.
- Toss in the cooked pasta and sliced chicken. Mix well to coat everything in the sauce.
- Serve immediately, garnished with fresh basil.
