- 4 boneless, skinless chicken breasts
- Salt and pepper to taste
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 1 cup chicken broth
- 1 cup heavy cream
- 1 cup sun-dried tomatoes, chopped
- 1 teaspoon Italian seasoning
- 1 cup spinach, chopped
- 1/2 cup grated Parmesan cheese
- Fresh basil for garnish
Instructions
- Season chicken breasts with salt and pepper on both sides.
- In a large skillet, heat olive oil over medium-high heat. Add the chicken and cook until browned on both sides, about 5-7 minutes per side. Remove from skillet and set aside.
- In the same skillet, add minced garlic and sauté for about 1 minute until fragrant.
- Pour in chicken broth and bring to a simmer. Stir in heavy cream, sun-dried tomatoes, and Italian seasoning. Cook for 2-3 minutes.
- Add spinach and Parmesan cheese, stirring until spinach is wilted and cheese is melted.
- Return chicken to the skillet, spooning the sauce over the top. Reduce heat to low and let simmer for 5-10 minutes until the chicken is cooked through.
- Garnish with fresh basil before serving.
