Ingredients
Scale
- 2 ripe mangoes, peeled and diced
- 1/2 cup coconut milk
- 1/4 cup honey or agave syrup (adjust based on sweetness preference)
- 1 tablespoon lime juice
- 1/4 cup water (optional, for thinning)
Instructions
- In a blender, combine diced mangoes, coconut milk, honey (or agave syrup), lime juice, and water (if using). Blend until smooth.
- Taste the mixture and adjust sweetness if necessary by adding more honey or agave.
- Pour the mango mixture into popsicle molds, leaving a little space at the top for expansion.
- Insert popsicle sticks and freeze for at least 4-6 hours or until completely solid.
- To remove popsicles, run warm water over the outside of the molds for a few seconds. Gently pull the popsicles out.
Notes
- For a creamier texture, use full-fat coconut milk.
- You can add extra fruit pieces like diced strawberries or blueberries for added flavor.
- These popsicles can be stored in a freezer-safe bag or container for up to 2 months.
