These refreshing mango popsicles are a perfect treat for hot summer days. Made with fresh mango puree, they’re naturally sweet and bursting with tropical flavor.


Ingredients

  • 2 ripe mangoes, peeled and diced
  • 1/2 cup coconut milk
  • 1/4 cup honey or agave syrup (adjust based on sweetness preference)
  • 1 tablespoon lime juice
  • 1/4 cup water (optional, for thinning)

Instructions

  1. In a blender, combine diced mangoes, coconut milk, honey (or agave syrup), lime juice, and water (if using). Blend until smooth.
  2. Taste the mixture and adjust sweetness if necessary by adding more honey or agave.
  3. Pour the mango mixture into popsicle molds, leaving a little space at the top for expansion.
  4. Insert popsicle sticks and freeze for at least 4-6 hours or until completely solid.
  5. To remove popsicles, run warm water over the outside of the molds for a few seconds. Gently pull the popsicles out.

Notes

  • For a creamier texture, use full-fat coconut milk.
  • You can add extra fruit pieces like diced strawberries or blueberries for added flavor.
  • These popsicles can be stored in a freezer-safe bag or container for up to 2 months.
