Description

A creamy, hearty loaded potato soup topped with crispy bacon, cheese, and green onions. Perfect for a cozy meal.

Ingredients

Scale
  • 4 large russet potatoes, peeled and diced
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 cup shredded cheddar cheese, plus more for topping
  • 6 slices bacon, cooked and crumbled
  • 1/2 cup sour cream
  • Salt and pepper to taste
  • Chives or green onions for garnish

Instructions

  1. In a large pot, combine the diced potatoes, chopped onion, garlic, and chicken broth. Bring to a boil over medium-high heat.
  2. Reduce heat and simmer for about 15-20 minutes, or until the potatoes are tender.
  3. Using an immersion blender, blend the soup until smooth. If you prefer a chunkier texture, blend only half of the soup.
  4. Stir in the heavy cream, cheddar cheese, and sour cream. Mix well and heat through until the cheese is melted.
  5. Season with salt and pepper to taste.
  6. Serve hot, topped with crumbled bacon, extra cheese, and chopped chives or green onions.
