- 4 large russet potatoes, peeled and diced
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 4 cups chicken broth
- 1 cup heavy cream
- 1 cup shredded cheddar cheese, plus more for topping
- 6 slices bacon, cooked and crumbled
- 1/2 cup sour cream
- Salt and pepper to taste
- Chives or green onions for garnish
Instructions
- In a large pot, combine the diced potatoes, chopped onion, garlic, and chicken broth. Bring to a boil over medium-high heat.
- Reduce heat and simmer for about 15-20 minutes, or until the potatoes are tender.
- Using an immersion blender, blend the soup until smooth. If you prefer a chunkier texture, blend only half of the soup.
- Stir in the heavy cream, cheddar cheese, and sour cream. Mix well and heat through until the cheese is melted.
- Season with salt and pepper to taste.
- Serve hot, topped with crumbled bacon, extra cheese, and chopped chives or green onions.
