Ingredients

  • 4 large eggs
  • 1/4 cup milk
  • 1/2 cup shredded cheese (cheddar, mozzarella, or your choice)
  • 1/2 cup cooked and crumbled breakfast sausage or bacon
  • 1/4 cup diced bell peppers
  • 1/4 cup diced onions
  • 1/4 cup salsa
  • 4 large flour tortillas
  • Salt and pepper to taste
  • Cooking spray or oil for frying

Instructions

  1. In a bowl, whisk together eggs, milk, salt, and pepper until well combined.
  2. In a skillet over medium heat, add cooking spray or a bit of oil. Sauté the bell peppers and onions until softened.
  3. Pour the egg mixture into the skillet and cook, stirring gently, until the eggs are scrambled and just set.
  4. Remove from heat and stir in cheese and cooked sausage or bacon.
  5. Warm the tortillas in a separate skillet or microwave until pliable.
  6. To assemble, place a generous portion of the egg mixture in the center of each tortilla. Top with salsa.
  7. Fold in the sides of the tortilla, then roll from the bottom up to enclose the filling.
  8. If desired, return the burritos to the skillet seam-side down and cook for a minute on each side until golden brown.
  9. Serve warm with extra salsa on the side.
