- 4 large eggs
- 1/4 cup milk
- 1/2 cup shredded cheese (cheddar, mozzarella, or your choice)
- 1/2 cup cooked and crumbled breakfast sausage or bacon
- 1/4 cup diced bell peppers
- 1/4 cup diced onions
- 1/4 cup salsa
- 4 large flour tortillas
- Salt and pepper to taste
- Cooking spray or oil for frying
Instructions
- In a bowl, whisk together eggs, milk, salt, and pepper until well combined.
- In a skillet over medium heat, add cooking spray or a bit of oil. Sauté the bell peppers and onions until softened.
- Pour the egg mixture into the skillet and cook, stirring gently, until the eggs are scrambled and just set.
- Remove from heat and stir in cheese and cooked sausage or bacon.
- Warm the tortillas in a separate skillet or microwave until pliable.
- To assemble, place a generous portion of the egg mixture in the center of each tortilla. Top with salsa.
- Fold in the sides of the tortilla, then roll from the bottom up to enclose the filling.
- If desired, return the burritos to the skillet seam-side down and cook for a minute on each side until golden brown.
- Serve warm with extra salsa on the side.
