- 4 large russet potatoes
- 1 cup shredded cheddar cheese
- 1/2 cup sour cream
- 1/2 cup cooked and crumbled bacon
- 1/4 cup chopped fresh chives
- Salt and pepper to taste
- Olive oil
Instructions
- Preheat the oven to 425°F (220°C).
- Wash the potatoes thoroughly and pierce them several times with a fork.
- Rub the potatoes with olive oil and sprinkle with salt.
- Place the potatoes directly on the oven rack and bake for 45-60 minutes, or until they are tender and the skin is crispy.
- Remove the potatoes from the oven and let them cool for a few minutes.
- Cut a slit in the top of each potato and gently squeeze the ends to open them up.
- Fluff the insides with a fork and season with salt and pepper.
- Top each potato with shredded cheddar cheese, sour cream, crumbled bacon, and chopped chives.
- Serve immediately and enjoy!
