  • 1 large egg yolk
  • 23 tablespoons cold water
  • 3 large eggs
  • 1/2 cup fresh lemon juice
  • 1 tablespoon lemon zest
  • 1 cup granulated sugar (for filling)
  • 1/2 cup heavy cream

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a medium bowl, combine flour, softened butter, 1/4 cup sugar, and salt. Mix until crumbly.
  3. Add the egg yolk and cold water, mixing until the dough comes together.
  4. Press the dough into a 9-inch tart pan evenly over the bottom and up the sides. Prick the bottom with a fork.
  5. Bake the crust for 15-20 minutes or until lightly golden. Remove from oven and let cool.
  6. In a separate bowl, whisk together the eggs, 1 cup sugar, lemon juice, lemon zest, and heavy cream until smooth.
  7. Pour the lemon filling into the cooled tart crust.
  8. Bake for 25-30 minutes or until the filling is set but slightly jiggly in the center.
  9. Let the tart cool completely before serving. Chill in the refrigerator for at least 2 hours for the best flavor.
