- 1 1/4 cups all-purpose flour
- 1/2 cup unsalted butter, softened
- 1/4 cup granulated sugar
- 1/4 teaspoon salt
- 1 large egg yolk
- 2–3 tablespoons cold water
- 3 large eggs
- 1/2 cup fresh lemon juice
- 1 tablespoon lemon zest
- 1 cup granulated sugar (for filling)
- 1/2 cup heavy cream
Instructions
- Preheat your oven to 350°F (175°C).
- In a medium bowl, combine flour, softened butter, 1/4 cup sugar, and salt. Mix until crumbly.
- Add the egg yolk and cold water, mixing until the dough comes together.
- Press the dough into a 9-inch tart pan evenly over the bottom and up the sides. Prick the bottom with a fork.
- Bake the crust for 15-20 minutes or until lightly golden. Remove from oven and let cool.
- In a separate bowl, whisk together the eggs, 1 cup sugar, lemon juice, lemon zest, and heavy cream until smooth.
- Pour the lemon filling into the cooled tart crust.
- Bake for 25-30 minutes or until the filling is set but slightly jiggly in the center.
- Let the tart cool completely before serving. Chill in the refrigerator for at least 2 hours for the best flavor.
