Description
These lemon bars have a buttery shortbread crust topped with a tangy lemon filling that’s perfectly sweet and tart.

- 1 cup (2 sticks) unsalted butter, softened
- 1/2 cup granulated sugar
- 2 cups all-purpose flour
- 1/4 teaspoon salt
- 1 cup granulated sugar (for filling)
- 4 large eggs
- 1/2 cup freshly squeezed lemon juice
- Zest of 1 lemon
- 1/4 teaspoon baking powder
- Powdered sugar for dusting
Instructions
- Preheat the oven to 350°F (175°C). Grease a 9×13 inch baking dish.
- In a mixing bowl, cream together the softened butter and 1/2 cup granulated sugar until light and fluffy.
- Add in 2 cups of flour and salt, mixing until combined. Press the mixture evenly into the bottom of the prepared baking dish.
- Bake the crust for 18-20 minutes or until lightly golden. Remove from oven and let cool slightly.
- In a separate bowl, whisk together 1 cup granulated sugar, eggs, lemon juice, lemon zest, and baking powder until smooth.
- Pour the lemon filling over the cooled crust and return to the oven.
- Bake for an additional 20-25 minutes or until the filling is set and slightly golden around the edges.
- Let the lemon bars cool completely in the pan. Dust with powdered sugar before cutting into squares.
Notes
- For a stronger lemon flavor, add more lemon zest.
- These lemon bars can be stored in the refrigerator for up to 5 days.
