Description

These lemon bars have a buttery shortbread crust topped with a tangy lemon filling that’s perfectly sweet and tart.


Ingredients

  • 1 cup (2 sticks) unsalted butter, softened
  • 1/2 cup granulated sugar
  • 2 cups all-purpose flour
  • 1/4 teaspoon salt
  • 1 cup granulated sugar (for filling)
  • 4 large eggs
  • 1/2 cup freshly squeezed lemon juice
  • Zest of 1 lemon
  • 1/4 teaspoon baking powder
  • Powdered sugar for dusting

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a 9×13 inch baking dish.
  2. In a mixing bowl, cream together the softened butter and 1/2 cup granulated sugar until light and fluffy.
  3. Add in 2 cups of flour and salt, mixing until combined. Press the mixture evenly into the bottom of the prepared baking dish.
  4. Bake the crust for 18-20 minutes or until lightly golden. Remove from oven and let cool slightly.
  5. In a separate bowl, whisk together 1 cup granulated sugar, eggs, lemon juice, lemon zest, and baking powder until smooth.
  6. Pour the lemon filling over the cooled crust and return to the oven.
  7. Bake for an additional 20-25 minutes or until the filling is set and slightly golden around the edges.
  8. Let the lemon bars cool completely in the pan. Dust with powdered sugar before cutting into squares.

Notes

  • For a stronger lemon flavor, add more lemon zest.
