Ingredients

  • 1/3 cup granulated sugar
  • 1/2 cup unsalted butter, melted
  • 4 large egg yolks
  • 1 can (14 oz) sweetened condensed milk
  • 3/4 cup fresh key lime juice
  • 1/2 teaspoon lime zest
  • 1/4 teaspoon salt
  • 1 cup heavy whipping cream
  • 2 tablespoons powdered sugar
  • Lime slices for garnish

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a medium bowl, combine graham cracker crumbs, granulated sugar, and melted butter. Mix until well combined.
  3. Press the mixture firmly into the bottom and up the sides of a 9-inch pie dish. Bake for 8-10 minutes until golden. Remove and let cool.
  4. In a large bowl, whisk together egg yolks, sweetened condensed milk, lime juice, lime zest, and salt until smooth.
  5. Pour the lime mixture into the cooled crust and bake for an additional 10 minutes. Remove from oven and let cool completely.
  6. In another bowl, whip heavy cream and powdered sugar until soft peaks form.
  7. Spread or pipe the whipped cream over the cooled pie. Garnish with lime slices.
  8. Refrigerate the pie for at least 3 hours before serving to allow it to set.

Notes

  • For the best flavor, use fresh key limes if possible.
  • You can substitute regular limes if key limes are unavailable, but the flavor will differ slightly.
  • This pie can be made a day in advance and stored in the refrigerator.
