This juicy stuffed chicken breast is packed with flavor and served alongside perfectly cooked garlic butter asparagus. A delicious and easy meal for any night of the week!

- 4 boneless, skinless chicken breasts
- 1 cup cream cheese, softened
- 1 cup spinach, chopped
- 1/2 cup sun-dried tomatoes, chopped
- 1 cup shredded mozzarella cheese
- 2 cloves garlic, minced
- 1 teaspoon Italian seasoning
- Salt and pepper, to taste
- 2 tablespoons olive oil
- 1 bunch asparagus, trimmed
- 4 tablespoons butter
- 1 teaspoon garlic powder
- 1 lemon, zested and juiced
Instructions
- Preheat your oven to 375°F (190°C).
- In a mixing bowl, combine cream cheese, spinach, sun-dried tomatoes, mozzarella cheese, minced garlic, Italian seasoning, salt, and pepper. Mix until well combined.
- Using a sharp knife, create a pocket in each chicken breast by slicing it horizontally, being careful not to cut all the way through.
- Stuff each chicken breast with the cheese mixture, securing with toothpicks if necessary.
- In a large oven-safe skillet, heat olive oil over medium-high heat. Sear the stuffed chicken breasts for 4-5 minutes on each side until golden brown.
- Transfer the skillet to the preheated oven and bake for 20-25 minutes or until the chicken is cooked through (internal temperature of 165°F/74°C).
- While the chicken is baking, prepare the asparagus. In a separate skillet, melt butter over medium heat. Add the asparagus, garlic powder, lemon zest, and lemon juice. Sauté for 5-7 minutes until tender.
- Serve the stuffed chicken breasts with garlic butter asparagus on the side.
Notes
- Feel free to add other veggies to the stuffing mix, such as mushrooms or bell peppers.
- For extra flavor, marinate the chicken breasts in your favorite seasoning blend before stuffing.
