  • 4 bone-in skin-on chicken thighs
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1 teaspoon dried thyme
  • 1 lemon, sliced
  • Fresh parsley for garnish (optional)

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Pat the chicken thighs dry with paper towels and season both sides with salt, pepper, garlic powder, paprika, and thyme.
  3. In an oven-safe skillet, heat the olive oil over medium-high heat.
  4. Add the chicken thighs skin-side down and sear for about 5 minutes until the skin is golden brown.
  5. Flip the chicken thighs and add the lemon slices to the skillet.
  6. Transfer the skillet to the preheated oven and bake for 20 minutes or until the internal temperature reaches 165°F (75°C).
  7. Remove from the oven and let the chicken rest for a few minutes before serving.
  8. Garnish with fresh parsley if desired and enjoy!
