- 4 bone-in skin-on chicken thighs
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- 1 teaspoon dried thyme
- 1 lemon, sliced
- Fresh parsley for garnish (optional)
Instructions
- Preheat the oven to 425°F (220°C).
- Pat the chicken thighs dry with paper towels and season both sides with salt, pepper, garlic powder, paprika, and thyme.
- In an oven-safe skillet, heat the olive oil over medium-high heat.
- Add the chicken thighs skin-side down and sear for about 5 minutes until the skin is golden brown.
- Flip the chicken thighs and add the lemon slices to the skillet.
- Transfer the skillet to the preheated oven and bake for 20 minutes or until the internal temperature reaches 165°F (75°C).
- Remove from the oven and let the chicken rest for a few minutes before serving.
- Garnish with fresh parsley if desired and enjoy!
