These juicy seafood skewers are bursting with flavor, perfectly grilled and drizzled with a delicious garlic herb butter that enhances the natural taste of the seafood.
Ingredients

- 1 lb shrimp, peeled and deveined
- 1 lb scallops
- 1 lb salmon, cut into cubes
- 1 lb zucchini, sliced
- 1 lb bell peppers, cut into chunks
- 1/4 cup olive oil
- 4 cloves garlic, minced
- 1/4 cup fresh parsley, chopped
- 1 teaspoon dried oregano
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon red pepper flakes (optional)
- Wooden skewers, soaked in water
Instructions
- In a bowl, combine olive oil, garlic, parsley, oregano, salt, black pepper, and red pepper flakes.
- Add shrimp, scallops, salmon, zucchini, and bell peppers to the bowl. Toss to coat everything evenly in the marinade. Let sit for 20-30 minutes.
- Preheat the grill to medium-high heat.
- Thread the seafood and vegetables onto the skewers, alternating between the different ingredients.
- Place the skewers on the grill and cook for about 2-3 minutes on each side, or until the seafood is opaque and cooked through.
- In a small saucepan, melt butter and mix in any remaining garlic herb marinade. Drizzle over the skewers before serving.
Notes
- You can substitute any seafood of your choice, such as lobster or crab.
- For added flavor, marinate the seafood for longer if time allows.
- If using metal skewers, there’s no need to soak them in water.
