These juicy seafood skewers are bursting with flavor, perfectly grilled and drizzled with a delicious garlic herb butter that enhances the natural taste of the seafood.


Ingredients

  • 1 lb shrimp, peeled and deveined
  • 1 lb scallops
  • 1 lb salmon, cut into cubes
  • 1 lb zucchini, sliced
  • 1 lb bell peppers, cut into chunks
  • 1/4 cup olive oil
  • 4 cloves garlic, minced
  • 1/4 cup fresh parsley, chopped
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon red pepper flakes (optional)
  • Wooden skewers, soaked in water

Instructions

  1. In a bowl, combine olive oil, garlic, parsley, oregano, salt, black pepper, and red pepper flakes.
  2. Add shrimp, scallops, salmon, zucchini, and bell peppers to the bowl. Toss to coat everything evenly in the marinade. Let sit for 20-30 minutes.
  3. Preheat the grill to medium-high heat.
  4. Thread the seafood and vegetables onto the skewers, alternating between the different ingredients.
  5. Place the skewers on the grill and cook for about 2-3 minutes on each side, or until the seafood is opaque and cooked through.
  6. In a small saucepan, melt butter and mix in any remaining garlic herb marinade. Drizzle over the skewers before serving.

Notes

  • You can substitute any seafood of your choice, such as lobster or crab.
  • For added flavor, marinate the seafood for longer if time allows.
  • If using metal skewers, there’s no need to soak them in water.
