- 4 boneless, skinless chicken breasts
- 2 tablespoons olive oil
- 1 lemon, zested and juiced
- 4 cloves garlic, minced
- 1 teaspoon dried oregano
- Salt and pepper, to taste
- 1 bunch broccolini, trimmed
- 4 tablespoons unsalted butter
- 1 tablespoon fresh parsley, chopped (for garnish)
Instructions
- Preheat the oven to 400°F (200°C).
- In a small bowl, mix together olive oil, lemon zest, lemon juice, minced garlic, dried oregano, salt, and pepper.
- Place chicken breasts in a baking dish and pour the lemon mixture over the chicken, ensuring it is well coated.
- Bake the chicken in the preheated oven for 25-30 minutes, or until the internal temperature reaches 165°F (75°C).
- While the chicken is baking, bring a pot of salted water to a boil. Add the broccolini and cook for 2-3 minutes until bright green and tender-crisp.
- Drain the broccolini and set aside.
- In a skillet over medium heat, melt the butter. Add the garlic and sauté for 1-2 minutes until fragrant.
- Add the cooked broccolini to the skillet and toss to coat in the garlic butter. Season with salt and pepper to taste.
- Once the chicken is done, remove it from the oven and let it rest for 5 minutes before slicing.
- Serve the juicy lemon chicken breast alongside the garlic butter broccolini, garnished with fresh parsley.
Notes
- For added flavor, marinate the chicken in the lemon mixture for a few hours or overnight.
- You can substitute broccolini with asparagus or green beans if preferred.
