  • 4 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 1 lemon, zested and juiced
  • 4 cloves garlic, minced
  • 1 teaspoon dried oregano
  • Salt and pepper, to taste
  • 1 bunch broccolini, trimmed
  • 4 tablespoons unsalted butter
  • 1 tablespoon fresh parsley, chopped (for garnish)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a small bowl, mix together olive oil, lemon zest, lemon juice, minced garlic, dried oregano, salt, and pepper.
  3. Place chicken breasts in a baking dish and pour the lemon mixture over the chicken, ensuring it is well coated.
  4. Bake the chicken in the preheated oven for 25-30 minutes, or until the internal temperature reaches 165°F (75°C).
  5. While the chicken is baking, bring a pot of salted water to a boil. Add the broccolini and cook for 2-3 minutes until bright green and tender-crisp.
  6. Drain the broccolini and set aside.
  7. In a skillet over medium heat, melt the butter. Add the garlic and sauté for 1-2 minutes until fragrant.
  8. Add the cooked broccolini to the skillet and toss to coat in the garlic butter. Season with salt and pepper to taste.
  9. Once the chicken is done, remove it from the oven and let it rest for 5 minutes before slicing.
  10. Serve the juicy lemon chicken breast alongside the garlic butter broccolini, garnished with fresh parsley.
