- 4 pieces Chicken breasts
- 2 tablespoons Olive oil
- 1 teaspoon Garlic powder
- 1 teaspoon Salt
- 1/2 teaspoon Black pepper
- 4 tablespoons Butter
- 1/2 cup Milk
- 4 medium Potatoes
- 2 tablespoons Chives
Instructions
- Preheat your oven to 375°F (190°C).
- Rub the chicken breasts with olive oil, garlic powder, salt, and black pepper.
- Place the chicken breasts in a baking dish and bake for 25-30 minutes until cooked through.
- While the chicken is baking, peel and chop the potatoes. Boil in salted water until tender, about 15-20 minutes.
- Drain the potatoes and return them to the pot. Add butter and milk, and mash until smooth and creamy.
- Serve the chicken breasts hot with a generous side of mashed potatoes.
- Garnish with chopped chives if desired.
Notes
- For extra flavor, marinate the chicken in your favorite seasoning blend for a few hours before cooking.
- Feel free to add garlic or cream to the mashed potatoes for added richness.
