  • 4 bone-in, skin-on chicken thighs
  • 2 pounds baby potatoes, halved
  • 4 tablespoons olive oil, divided
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Fresh herbs for garnish (optional)

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. In a large bowl, combine the halved baby potatoes with 2 tablespoons of olive oil, garlic powder, onion powder, paprika, salt, and pepper. Toss until the potatoes are evenly coated.
  3. Place the seasoned potatoes on a large baking sheet in a single layer.
  4. In the same bowl, add the chicken thighs and drizzle with the remaining 2 tablespoons of olive oil. Season with salt and pepper, making sure to rub the seasoning under the skin for extra flavor.
  5. Nestle the chicken thighs amongst the potatoes on the baking sheet, skin side up.
  6. Roast in the preheated oven for 35-45 minutes, or until the chicken reaches an internal temperature of 165°F (74°C) and the skin is golden and crispy.
  7. Remove from the oven and let rest for 5 minutes before serving. Garnish with fresh herbs if desired.

Notes

  • For extra crispy skin, you can broil the chicken thighs for the last 2-3 minutes of cooking.
  • Feel free to add other vegetables, such as carrots or Brussels sprouts, to the baking sheet for a complete meal.
  • Leftover chicken can be stored in an airtight container in the refrigerator for up to 3 days.
