- 4 bone-in, skin-on chicken thighs
- 2 pounds baby potatoes, halved
- 4 tablespoons olive oil, divided
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon paprika
- Salt and pepper to taste
- Fresh herbs for garnish (optional)
Instructions
- Preheat the oven to 425°F (220°C).
- In a large bowl, combine the halved baby potatoes with 2 tablespoons of olive oil, garlic powder, onion powder, paprika, salt, and pepper. Toss until the potatoes are evenly coated.
- Place the seasoned potatoes on a large baking sheet in a single layer.
- In the same bowl, add the chicken thighs and drizzle with the remaining 2 tablespoons of olive oil. Season with salt and pepper, making sure to rub the seasoning under the skin for extra flavor.
- Nestle the chicken thighs amongst the potatoes on the baking sheet, skin side up.
- Roast in the preheated oven for 35-45 minutes, or until the chicken reaches an internal temperature of 165°F (74°C) and the skin is golden and crispy.
- Remove from the oven and let rest for 5 minutes before serving. Garnish with fresh herbs if desired.
Notes
- For extra crispy skin, you can broil the chicken thighs for the last 2-3 minutes of cooking.
- Feel free to add other vegetables, such as carrots or Brussels sprouts, to the baking sheet for a complete meal.
- Leftover chicken can be stored in an airtight container in the refrigerator for up to 3 days.
