Description
This juicy baked stuffed chicken breast is filled with a delicious mixture of herbs and cheeses, served alongside a flavorful wild rice pilaf.

- 4 pieces chicken breasts
- 4 oz cream cheese
- 2 cups spinach
- 2 cloves garlic
- 1 cup mozzarella cheese
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 2 tablespoons olive oil
- 1 cup wild rice
- 2 cups chicken broth
- 1 small onion
- 1 medium carrot
- 1/4 cup parsley
Instructions
- Preheat the oven to 375°F (190°C).
- In a mixing bowl, combine cream cheese, spinach, garlic, mozzarella cheese, salt, and pepper. Mix until well incorporated.
- Using a sharp knife, make a pocket in each chicken breast. Stuff each pocket with the cheese and spinach mixture.
- Heat olive oil in a skillet over medium heat. Sear the stuffed chicken breasts for 3-4 minutes on each side until golden brown.
- Transfer the chicken to a baking dish and bake in the preheated oven for 25-30 minutes, or until the internal temperature reaches 165°F (74°C).
- Meanwhile, in a saucepan, combine wild rice, chicken broth, onion, and carrot. Bring to a boil, then reduce heat and simmer for 45-50 minutes or until rice is tender.
- Stir in chopped parsley into the wild rice pilaf before serving.
- Serve the baked stuffed chicken breasts with the wild rice pilaf on the side.
Notes
- Feel free to add other vegetables to the stuffing mixture, such as bell peppers or mushrooms.
- You can also use different types of cheese if you prefer.
