This juicy baked stuffed chicken breast is filled with a delicious mixture of herbs and cheeses, served alongside a flavorful wild rice pilaf.


Ingredients

  • 4 pieces chicken breasts
  • 4 oz cream cheese
  • 2 cups spinach
  • 2 cloves garlic
  • 1 cup mozzarella cheese
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 2 tablespoons olive oil
  • 1 cup wild rice
  • 2 cups chicken broth
  • 1 small onion
  • 1 medium carrot
  • 1/4 cup parsley

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a mixing bowl, combine cream cheese, spinach, garlic, mozzarella cheese, salt, and pepper. Mix until well incorporated.
  3. Using a sharp knife, make a pocket in each chicken breast. Stuff each pocket with the cheese and spinach mixture.
  4. Heat olive oil in a skillet over medium heat. Sear the stuffed chicken breasts for 3-4 minutes on each side until golden brown.
  5. Transfer the chicken to a baking dish and bake in the preheated oven for 25-30 minutes, or until the internal temperature reaches 165°F (74°C).
  6. Meanwhile, in a saucepan, combine wild rice, chicken broth, onion, and carrot. Bring to a boil, then reduce heat and simmer for 45-50 minutes or until rice is tender.
  7. Stir in chopped parsley into the wild rice pilaf before serving.
  8. Serve the baked stuffed chicken breasts with the wild rice pilaf on the side.

Notes

  • Feel free to add other vegetables to the stuffing mixture, such as bell peppers or mushrooms.
  • You can also use different types of cheese if you prefer.
